Blue Cheese Salad Dressing
I have experimented with different bases for this dressing: Mayonnaise, whole milk, heavy cream, sour cream, buttermilk, and varying combinations of these, and have decided I prefer a combination of sour cream and olive oil. I wanted a blue cheese dressing that complemented the flavor of the blue cheese without competing with it and I think this one successfully accomplishes that…
Ingredients
1 medium shallot, minced
1 small garlic clove, finely minced or pushed through a press
1/3 cup sour cream
2 Tablespoons olive oil
2 Tablespoons lemon juice
1 dash Worcestershire Sauce
3 ounces Blue Cheese
freshly ground white or black pepper to taste
salt to taste

In a small bowl, combine shallot, garlic, sour cream, olive oil, lemon juice, and Worcestershire Sauce.

Add the blue cheese and stir vigorously with a small spoon, further breaking up the blue cheese. Add freshly ground pepper and then salt to taste. The amount of salt will vary depending on the salinity of the blue cheese used, but I usually end up adding about a teaspoon of Diamond Kosher salt.
Crisp Romaine lettuce is my personal favorite salad green to top with Blue Cheese dressing.
