Gin Fizz
This is a refreshing cocktail for a summertime party and is festive enough for a holiday gathering. I tend to make this most often in January and February during the peak of our lemon season. If you find yourself with an extra egg white, a Gin Fizz is a fine use for it!
Ingredients
2 ounces Gin
1 ounce lemon juice
1/2 ounce agave syrup or honey
1 egg white
1/2 cup ice cubes
2 ounces club soda or sparkling water

Into a cocktail shaker, measure the gin, lemon juice, agave syrup, and egg white. Place the lid onto the shaker and dry shake until egg white becomes foamy, about 20 seconds.

Add ice and shake another 20 seconds or until thoroughly chilled. Strain into a glass. Add club soda and serve.
