Hot Cocoa Mix

This is so much better for you and much better tasting than the store bought hot cocoa mixes that contain dried milk products, corn syrup, and often hydrogenated vegetable oils.

Ingredients

1 cup granulated sugar or evaporated cane juice
2/3 cup baking cocoa or raw cacao powder
1/2 teaspoon salt or 1 teaspoon Diamond Kosher salt

Instructions

Measure the ingredients into an airtight container.  Place the lid on the container, ensuring it is closed and shake until the ingredients are dispersed.  Store in the cupboard.

To make hot cocoa by the cup, heat 8 ounces of milk. Place a heaping spoonful of mix into a mug and add a dash of the hot milk.  Mix thoroughly until the sugar is dissolved and there are no more lumps of cocoa. Add the remaining hot milk to the mug, stir, and enjoy.

To make a large amount of cocoa, place the desired amount of cocoa mix into a saucepan (1 2/3 Tablespoons of mix per cup of milk) and add just enough water to dissolve the chocolate and sugar. Heat the mixture over medium heat, stirring, just until the sugar and chocolate are dissolved, then add milk and heat to desired temperature.

Add one gallon of milk to the entire recipe, or 1 2/3 cups of cocoa mix, to make approximately 16 servings of hot cocoa.

I like to use the milk frothing attachment on our espresso machine to make an extra creamy and very quick mug of hot chocolate. Top with freshly whipped cream for extra decadence.
