Hummus
I started making hummus after a trip to Greece in the year 2000. This recipe has undergone 20 years of tweaking.
Ingredients
1 – 15 oz. can Garbanzo beans, drained and rinsed
⅓ cup Extra Virgin Olive Oil
3 Tablespoons Tahini
3 Tablespoons lemon juice
1 clove garlic, minced
1 teaspoon Diamond Kosher Salt (½ teaspoon table salt)
¼ teaspoon ground coriander
¼ teaspoon cumin
¼ teaspoon chili powder or paprika
Freshly ground black and/or white pepper
2 or more Tablespoons water, if needed

Put all ingredients except for water in the bowl of a food processor and process to a smooth paste that is light and almost fluffy. Add water if the mixture is too thick. Additional water may be needed to process the hummus to a smooth texture. Taste for salt and pepper. Enjoy!
For an authentic Greek Meze, serve hummus with freshly toasted pita bread. It is also delicious with a raw vegetable platter.
