Spiced Molasses Cookies

These are an old fashioned cookie with no fancy mix-ins. You can use your choice of regular or black strap molasses. The latter will result in a stronger molasses flavor.

Ingredients

3/4 cup (1 1/2 sticks) Unsalted butter, at room temperature or softened in the microwave
1 cup granulated sugar
1/4 cup molasses
1 large egg
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon Diamond kosher salt (or 1/2 teaspoon table salt)
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger

Instructions

Preheat the oven to 350 degrees.

Place the butter and granulated sugar into the bowl of a stand mixer or a large mixing bowl. Using a stand or hand-held mixer, cream the butter and sugar together until fluffy.

Add the molasses and egg and blend them into the creamed mixture.

Pause mixing. On top of the creamed ingredients, add the flour, baking soda, spices, and salt. Slowly blend these dry ingredients into the creamed mixture taking care to thoroughly distribute the baking soda and spices into the flour as you start to mix. Mix thoroughly, stopping once to scrape down the sides of the bowl.

Using a cookie scoop or a tablespoon and spatula, form uniformly sized cookies and arrange them, evenly spaced, on a baking sheet. Bake at 350 degrees for 8 minutes for chewy cookies, 10 minutes for crispy.
